Banoffee overnight Weetabix

Ingredients:

  • 2 Weetabix

  • 1 ½ tbsp maple syrup

  • Splash of milk

  • 100g Greek yogurt

  • 1 tbsp peanut butter

  • 1 scoop (25g) of vanilla protein

  • Banana, sliced

  • Grated chocolate

Method:

  • Crumble up the Weetabix with your hands into a shallow bowl until it’s all broken up. Add in ½ tbsp maple syrup and a splash of milk to create a wet but not sloppy mixture. Mix well and pat down to form a solid base.

  • Create the topping by mixing 1 tbsp maple syrup, 100g Greek yogurt, 1 tbsp peanut butter and mix well.

  • Add in the scoop of protein powder and stir through.

  • Place your sliced banana in a layer on top of the Weetabix base and then top with your yogurt mixture.

  • Top with a few extra banana slices and some grated chocolate and then pop straight into the fridge for 3 hours or overnight.
