Lime and raspberry cheescake

Ingredients
6 ginger nut biscuits (crushed)
200g low fat cream cheese
200g low fat fromage frais
A few drops of vanilla essence
1 lime (grated rind and juice)
100g of tinned raspberries
Method
Split the crushed biscuits between four serving glasses
In a mixing bowl mix together the fromage frais, cream cheese, vanilla essence, lime juice and lime rind
Add the mixture each of the glasses on top of the biscuits
Add a spoonful of drained raspberries on top with some of the juice
Leave to set in the fridge for 15 minutes
