Lime and raspberry cheescake

Ingredients

  • 6 ginger nut biscuits (crushed)

  • 200g low fat cream cheese

  • 200g low fat fromage frais

  • A few drops of vanilla essence

  • 1 lime (grated rind and juice)

  • 100g of tinned raspberries

Method

  • Split the crushed biscuits between four serving glasses

  • In a mixing bowl mix together the fromage frais, cream cheese, vanilla essence, lime juice and lime rind

  • Add the mixture each of the glasses on top of the biscuits

  • Add a spoonful of drained raspberries on top with some of the juice

  • Leave to set in the fridge for 15 minutes
