BBQ Korean beef bowls

Ingredients (serves 4):

  • 500g lean beef mince

  • 1 teaspoon ginger

  • 1 teaspoon garlic

  • 1 tablespoon chipotle paste

  • 1 tablespoon light soy sauce

  • 2 tablespoons bbq sauce

  • 1 red pepper (sliced)

  • 4 spring onions (sliced)

  • 1 packet of basmati rice

  • Siracha mayo

  • Coriander

Method:

  • Fry the mince and add the ginger and garlic

  • Once the mince has started to brown, add in the chipotle paste, soy sauce and bbq sauce - add a splash of water if needed to loosen up the sauce

  • Add the peppers and cook them until then soften

  • Heat the rice in the microwave (as per the packet instructions)

  • Add the rice and beef to a bowl and top with sriracha mayo, chopped spring onion and coriander
