BBQ Korean beef bowls
Ingredients (serves 4):
500g lean beef mince
1 teaspoon ginger
1 teaspoon garlic
1 tablespoon chipotle paste
1 tablespoon light soy sauce
2 tablespoons bbq sauce
1 red pepper (sliced)
4 spring onions (sliced)
1 packet of basmati rice
Siracha mayo
Coriander
Method:
Fry the mince and add the ginger and garlic
Once the mince has started to brown, add in the chipotle paste, soy sauce and bbq sauce - add a splash of water if needed to loosen up the sauce
Add the peppers and cook them until then soften
Heat the rice in the microwave (as per the packet instructions)
Add the rice and beef to a bowl and top with sriracha mayo, chopped spring onion and coriander
