Fajita pasta
Ingredients (serves 4):
Fry light spay
2 chicken breasts (diced)
1 onion (sliced)
1 pepper (sliced)
2 tablespoons fajita seasoning
300g wholemeal pasta
2 tablespoons low fat cream cheese
1 tablespoon oregano
Salt
Pepper
Method:
Heat the oil in a large pan and add the chicken
Fry for a few minutes over a medium heat until golden all over
Add the onions and pepper to the same pan and fry over a medium heat for 5 to 8 minutes, add 1 tablespoon of fajita seasoning and mix well
Cook the pasta according to the pack instructions, reserve 50ml of the cooking water then drain
Add the pasta to the pan, with the 50ml of pasta water and stir
Add the cream cheese and season to taste
Sprinkle with oregano and top with a little extra cheese
