Fajita pasta

Ingredients (serves 4):

  • Fry light spay

  • 2 chicken breasts (diced)

  • 1 onion (sliced)

  • 1 pepper (sliced)

  • 2 tablespoons fajita seasoning

  • 300g wholemeal pasta

  • 2 tablespoons low fat cream cheese

  • 1 tablespoon oregano

  • Salt

  • Pepper

Method:

  • Heat the oil in a large pan and add the chicken

  • Fry for a few minutes over a medium heat until golden all over

  • Add the onions and pepper to the same pan and fry over a medium heat for 5 to 8 minutes, add 1 tablespoon of fajita seasoning and mix well

  • Cook the pasta according to the pack instructions, reserve 50ml of the cooking water then drain

  • Add the pasta to the pan, with the 50ml of pasta water and stir

  • Add the cream cheese and season to taste

  • Sprinkle with oregano and top with a little extra cheese
