Smashed sausage breakfast buns
Ingredients:
2 low fat sausage
2 breakfast muffins
2 eggs
2 Slices of low fat cheese
½ avocado
Tbsp low sugar tomato sauce
Chopped chives
Method:
Start by whisking the egg thoroughly and season with a pinch of salt and pepper.
Pour the eggs into a preheated non-stick pan on low heat. Let them sit for about 30 seconds before gently pushing the edges inward with a spatula, rotating the pan to allow the uncooked egg to fill the gaps. Turn off the heat, sprinkle with chopped chives and let the warmth finish cooking the eggs while you cook the sausage.
Place your sausages in a bowl and mash to form a mince. Remove and shape into circular pattys.
Heat a few sprays of olive oil in a pan over medium heat. Place your pattys in the pan and cook for 5 minutes, allowing the sausage to crisp up. Flip the patty halfway and add the slice of cheese and allow to melt slightly.
Whilst the pattys are cooking, toast your muffins under the grill for 2 minutes until they are golden brown.
Mash up your avocado in a bowl.
Time to assemble, starting by spreading the smashed avocado on the muffin. Then remove the pattys from the pan and place atop of the muffins. Add the egg on top, a drizzle of sauce and the remaining muffin slice.
Enjoy straight away or wrap in grease proof paper, and place in the freezer.
